Is the 5mm, 8mm cutter the width, depth or hight?

The cutters size is the diameter of the bit. So, a 5mm cutter will make a mortise for which you will use 5mm Domino tenons. Some tenons come in multiple lengths. The Domino DF 500 comes with a 5mm cutter included.

What is the best size for tabletops using 4/4 hardwood.

Generally, you sent the tenon to be 1/3 of the thickness of your lumber. So, 8mm would be best for 1" material. There are 25.4mm in an inch.

What is the smallest mortise and tenon configuration the machine will make? Is it 4mm thick by 20mm wide by how long? Can this be used in wood as thin as 1/4" or must it be thicker?

Ideally, you would want to use 1/2" thick materials with the Domino and the 4mm tenons. The general rule of thumb is that the tenon should be roughly a third of the thickness of your material. 4mm comes out to about 5/32". The depth of the tenon is ~...

Will the DF 500 Q cut for a 10mm x 80mm domino?
